Ginger juice








(ginger juice)


DIFFICULTY: EASY PREPARATION: 20 MINUTES COOKING: NONE


INGREDIENTS FOR 12 CUPS


(3 LITERS)


2 lb 4 oz (1 kg) fresh ginger


3 limes


2 vanilla beans


1 cup (200 g) light brown sugar, packed


1 cinnamon stick


PREPARATION


Wash the ginger well and cut it into pieces. Using a juicer or extractor, extract the ginger juice.


Zest and juice the limes.


Split the vanilla beans in half lengthways and scrape out the seeds.


Add the brown sugar, vanilla beans and seeds, cinnamon stick, lime zest and juice, and ginger juice to a large jug. Mix well to dissolve the sugar, then add 10 cups (2.5 liters) water.


Keep in the fridge and serve chilled.


CHEF ANTO'S TIP


To vary the taste, you can replace the water with fruit juice (pineapple, mango, passionfruit, etc.). If you don't have a juicer, you can use unsweetened ginger juice.


Enjoyed as a mocktail or cocktail, gnamakoudji will make everyone happy. This drink also has therapeutic properties, such as soothing nausea in pregnant women and acting as an anti-inflammatory for coughs or bronchitis; it can be consumed either hot or cold. Gnamakoudji can be kept in the fridge for a week.
